Easy Vegan Pesto
Dairy-free, nutritious, healthy, low in calories homemade vegan pesto. It has anti-bacterial and anti-inflammatory properties. You can use this pesto for soups, salads, bread, and vegetables etc.
Ingredients:
✓ 2 cups or 150 g fresh basil leaves
✓ 2/3 cup walnuts, macadamia or pine nuts
✓ 1 to 2 cloves garlic
✓ 4 tablespoons extra virgin olive oil
✓ sea salt and freshly ground pepper, to taste
✓ 1 tablespoon lemon juice
✓ 3 tablespoons nutritional yeast
Instructions:
Place basil leaves, nuts of your choice (in my case it was walnuts), garlic and nutritional yeast in a food processor and blend until it becomes a thick paste. Drizzle the olive oil, add sea salt, pepper, lemon juice and pulse a few more times to combine. Enjoy!
